Ingredients

  • 1 kg carrots
  • 2 yellow onions
  • 2 garlic cloves
  • 1 teaspoon tabasco
  • 2 tbsp olive oil
  • 50g grated ginger
  • 2L good vegetable broth
  • About 1 teaspoon of salt
  • Fresh coriander

Method

  1. Peel and chop carrots and roughly chop onions. Heat olive oil in a large saucepan. Cook the onion until soft then add carrots and broth.
  2. Cover and cook for about 20 minutes until the carrots are soft. Add the grated ginger and blend soup until smooth.
  3. Season with salt and serve with coriander, crème fraiche and crusty bread.
